Saturday was the day that I made my cornbread dressing for Thanksgiving. As is typical for most people, I made the dressing that my mom has always made. I think that this is one tradition that people tend to stick with. I have eaten many other dressings, but I have never liked them as much as my own. In fact, not to brag, but I have had several people tell me that they do not usually like dressing at all, but that they really like mine.
This being said, let me just say that this is a huge undertaking. The finished product this year ended up being somewhere between 48 and 52 pounds of dressing in my freezer (you can’t spend all day cooking, or in my husband and mother’s case…smelling, without eating some of it!) I started before 7:00 a.m. and finished somewhere around 4:00 that evening. That did include putting it in quart Ziploc bags and then vacuum sealing them as well. Since it is so much to last through the year I don’t want any risk of freezer burn. The last time that I did not vacuum seal the bags I am sure I could figure out cutting this recipe down in size for an easier day, but this is how my mom taught me, and so this is what I do. We all love dressing, and this allows us to have it year-round.
